Both Ensoniq and I didn't think my suggestion would fix the problem.
Give it a few days and see what happens.
Come back on here if things don't work out.
It's weird, but the same model of car can exhibit similar problems, but require a different solution. Go figure.....

The idle stop screw shouldn't be fiddled with, it is set in the factory and will never need to be adjusted. I would recommend taking the car to a Magna mechanic (eg. Mal) who will be able to reset it using a MUTII.
Anyhoo, there is a separate circuit in the TPS that acts as a switch, aside from the pot function for throttle position. If the TPS is out of adjustment or the throttle isn't always closing properly this switch won't trip and the ECU won't switch to idle mode, where the ISC regulates idle speed. The full TPS checking procedure is here, with separate sections for whether you have traction control or not:

Just follow the instructions, with or without Traction Control ( I hope you don't have traction control )

this morning i drove to shops no problem
afternoon drove somewhere close again noticed idling was high around 1800 i had set it to 1000, i turned engine on it normally goes up and then settles.. this didn't settle stuck on 1800
evening about just now went out again and it wouldn't start.. starts then immediately stalls and dies.. after some revving cursing etc, i was able to drive without ac and using both foot on pedals , came back turned engine off turned on again same thing..
only thing different today that its a pissy rainy day.. im lost..
my previous 2000 tj gave me zero dramas in 5 years i owned.. this 2004 car is driving me insane.
I can't see any reference to having checked out the ignition coil? From my own limited experience, a problematic coil can give really weird inconsistent behaviour something like you describe...
I would also try disconnecting the Air Flow Meter to force it into "limp home" mode.
12 months ago I ended up with a failing AFM and the local mechanic told me to unplug the AFM connector.
It stopped the dangerous stalling and the need to frantically prod the accelerator pedal to keep the engine running.
I was able to drive the car gently for 3 days whilst waiting for the replacement AFM to arrive in the mail.
It will cause an error light to show, but it might give some guidance as to what the problem might be.
You can't lose by trying my suggestion, as if it doesn't fix your problem, just reconnect the AFM connector and clear the error code by powering down the battery.
So have you checked that the 'closed throttle position switch' is working consistently? The procedure is above.

If you'll pardon the expression, until you verify the operation of the closed throttle switch you are pissing in the wind by fiddling with the air screw, which will fix nothing. Its only purpose is to set up the initial position of the ISC. If your ECU doesn't know the engine's idling I'm not the least bit surprised that the idle speed would be significantly affected by temperature.
