OK, with Greg's help (ie: he did the work, I took photos, swore at cable ties and drank coffee) my bluetooth kit has been installed.
Here's a DIY with photos for you to try at home, also helps with anyone who wants to pull the dash apart, as it really IS very easy on the 380's, much easier than either of us were expecting!
OK, firstly, the unit we are using is a Sony Ericsson HCB-300. They're discontinued, but you can still pick em up on eBay pretty cheap.
OK, first, remove the knobs for the climate control, and lift the faceplate off. There are three clips up either side, evenly spaced. Best bet to start lifting from the bottom in each corner.
You may need to use a screwdriver with some electrical tape or similar for the stiff upper clips
After, it should look like this:
Unclip the climate control:
Remove the four screws circled in red, two each side:
